Chinese Style Paneer Wrap

Main Ingredients

  1. Wheat and All purpose Flour Tortillas
  2. 1/4 thinly sliced Red Bell Pepper
  3. 1/4 thinly sliced Onion
  4. 1/4 thinly sliced yellow Bell Pepper
  5. 2 Baby corn sliced
  6. 1/2 cup snow peas, sliced
  7. 1 cup bean sprouts
  8. 1 tbsp sesame oil
  9. 2 tbsp soy sauce
  10. 1 tbsp honey
  11. 1 cup thinly sliced paneer
  12. Salt to taste
  13. 1/2 tbsp oil

How to Make

  1. Heat the oil in a pan.
  2. Add length wise thinly sliced paneer and saute till it is light brown.
  3. Take a bowl and mix honey, soy sauce and sesame oil.
  4. Now add the paneer to this mixture and let it sit for 1 hour.
  5. Take tortillas and place them on flat pan.
  6. Add marinated paneer, sprouts, peas, bell peppers, onion and baby corn.
  7. Roll up the tortilla and wrap it in parchment paper.

  1. You can replace paneer with tofu.

Main Ingredients

  1. Gathiya (Gujarati Snack) – 1 cups
  2. Tomatoes – 2
  3. Oil – 1 tbsp
  4. Mustard Seeds – 1 tsp
  5. Asofetida – pinch
  6. Jaggery – 1 tbsp
  7. Turmeric Powder – 1 tsp
  8. Red Chilli Powder -  1 tsp
  9. Coriander powder – 1 tsp
  10. Cilantro – tbsp
  11. Salt to taste

How to Make

  1. Finely Chop the tomatoes.
  2. Heat the pan and add the oil.
  3. Add mustard seeds.
  4. When u hear cracking sound add asofetida.
  5. Add Tomatoes and let them cook till they are fully cooked.
  6. Add Spices now like red chilli powder, turmeric powder, salt and coriander powder.
  7. And add salt to taste,1 cup of water, Jaggery and let it simmer for minute or two.
  8. Turn of the flame and Add gathiya.
  9. Garnish with Cilantro.

  1. You can also add Ginger Garlic paste to the tomatoes.

Main Ingredients

  1. Watermelon cut in cubes – 2 cup
  2. Sugar (only if watermelon is not sweet enough) – 1 tbsp
  3. Blue berries – 1/2 cup

How to Make

  1. Before you make drink keep the watermelon cubes in fridge for and hour or two.
  2. Take a blender and add watermelon and blue berries(Keep 5 -6 berries for garnish) and blend them to your desire consistency.
  3. If watermelon is not sweet enough you can add sugar.
  4. Take a glass and add some berries to it and then pour the juice.
  5. Also you can add some berries on top of the glass.

  2. Baking Powder – 1 tsp
  3. Cooking Oil – 3/4 cup
  4. Cumin Seeds – 1 tbsp
  5. Salt – 1 1/2 tsp
  6. Sugar – 1/4 cup

How to Make

  1. Take a bowl and mix all purpose flour, cumin seeds, salt and baking powder.
  2. Take another bowl and mix sugar and oil and add this mixture to dry ingredients
  3. Mix well so that it turns into dough.
  4. Shape the cookies of your choice.
  5. Grease the baking sheet and put all cookies on the sheet.
  6. Preheat the oven at 350 and bake it till they turn light brown.
  7. Take them out of the oven immediately transfer them to cooking rack.
  8. Store in an airtight container.

Main Ingrediants

  1. Cucumber – 1
  2. Lemon Juice – 1 tbsp
  3. Black Pepper  to taste
  4. Black Salt to taste
  5. Kosher Salt to taste
  6. Roasted and crushed Cumin Seeds – 1 tsp

How to Make

  1. Wash and cut the cucumber in round circles or as you wish.
  2. Add black pepper, black salt, Kosher Salt and roasted and crushed cumin seeds.
  3. Add lemon juice and toss it.
  4. Cover it and let it set for minutes or two.

Variations

  1. You can add any other vegetable of your choice like Bell peppers or onion or tomatoes.

  1. Wheat Flour – 2 Cups
  2. Jaggery – 1 Cup
  3. Ghee – 1 Cup
  4. Poppy Seeds – 1 tbsp
  5. Almond Powder – 2 tbsp
  6. Ginger Powder – 1 tbsp
  7. Cardamom Powder – 1 tsp
  8. Nutmeg Powder – 1 tsp

How to Make

  1. Heat the ghee in a pan.
  2. Add wheat flour slowly and mix well.
  3. Continuously stir it and roast it until it turns light brown.
  4. Turn of flame and add grated jaggery to it.
  5. Also add ginger powder ,almond powder, nutmeg powder and cardamom powder to it.
  6. Take a plate and apply ghee on it.
  7. Also sprinkle some poppy seeds on it.
  8. Now immediately pour the mixture on to this plate.
  9. Take flat steel spoon and spread the mixture in plate.
  10. Sprinkle some of the poppy seeds on the mixture.
  11. You can decorate it with any dry fruit.

Variations

  1. You can add 1 tbsp of roasted chick pea flour to it.

Gujiya

Main Ingredients

  1. 2 cup all purpose flour
  2. 1/2 cup thickened milk / mawa
  3. 1/2 finely grated coconut
  4. 1 cup powdered sugar
  5. 1/2 tsp cardamom powder
  6. 1/2 tsp nutmeg powder
  7. 1/2 cup mixed dry fruit (Almonds, Cashew Nuts, Raisins, pistachio)

Other : ghee, oil, water

How to Make Filling

  1. Heat the pan and roast the mawa till it turns very light brown and keep aside.
  2. When it cools down add finely grated coconut, powdered sugar, cardamom powder, nutmeg powder and dry fruits and mix well.

How to Make Outer layer

  1. Take a bowl and mix 6 tbsp of oil with all purpose flour.
  2. Add some water and knead into soft dough.
  3. Cover it with damp cloth and keep aside.
  4. Divide into equal parts small ball.
  5. Take one ball and roll into chappatis.
  6. Take spoonful filling and put in the center of the chappati.
  7. Dip your finger tip in milk and apply milk to the border of the chappati.
  8. Now seal it in any shape you like.
  9. Deep fry these till they are light brown.

Variations

  1. You can also add roasted semolina.
  2. You can use finely chopped dates along with dry fruits.
  3. You can use light brown sugar instead of powdered sugar.

Gujarati Kadhi / Sweet and Spicy Kadhi

 

 

 

 

 

 

 

 

Main Ingredients

  1. 2 cup buttermilk
  2. 2 tbsp chick pea flour / Bengal gram flour / besan

Spices and Herbs

  1. 5-6 Curry Leaves
  2. Salt to taste
  3. 1/2 tsp Green Chili
  4. 1/2 tsp grated ginger
  5. 2 tsp Cilantro
  6. 1/2 tsp cumin seeds
  7. 2 tbsp sugar
  8. 1 whole red chili
  9. 2 cloves
  10. 1 cinnamon stick

Other : ghee, water

How to Make

  1. Take a bowl and mix flour with buttermilk.
  2. Make sure there are no lumps.
  3. Add salt, grated ginger, crushed green chillies, sugar and mix well.
  4. Pour this mixer in a pot and bring to boil.
  5. Put the stove to very low heat.
  6. Take another pan and heat ghee.
  7. Add cumin seeds, curry leaves, whole red chili, cloves and cinnamon stick.
  8. When you hear crackle turn off the stove.
  9. Now add this tampering to the pot.
  10. Mix well and let it simmer for minute or two.
  11. Garnish with cilantro.

Variations

  1. You can use oil instead of ghee if you don’t have.

  1. Take leftover rice in a bowl and make sure all rice are separated nicely.
  2. Heat the pan with oil.
  3. Add mustard seeds, curry leaves.
  4. When you hear crackle add turmeric powder and red chilli powder.
  5. Immediately add rice to it.
  6. Add salt and mix all together and saute it for minute.
  7. Garnish with finely chopped cilantro.

Variations

  1. You can saute Green onions or plain onion and tomatoes and add to it.
